VINTAGE
The 2021 vintage will be remembered for low yields with intensely-flavored, small-sized berries and a smooth and uneventful harvest season. The season started off with very little rain, leading to the 2nd year of drought conditions. While concerning in the long term, the drought of 2021 resulted in a more natural load on the vines, requiring less pruning and dropping of fruit. The resulting grapes are packed full of flavor. Truly, one of the great vintages.
WINEMAKING
Truly befitting of its name, Adattamento (adaptation) is a versatile wine capable of owning the floor with almost any dance partner. This wine spends 20 months in barrel after finishing fermentation out on the crushpad. The barrels for this wine are an even mix of new and neutral French oak, giving the finished wine structure while also allowing for flexibility.
TASTING NOTES
After having gone so long without the 2018, the second vintage of our Adattamento is a welcome sight. Not as dark and brooding as 2018, our 2021 is more bright and cheerful. The aromas here are more focused on red berries, vanilla, and baking spices. On the palate a beautiful Rainier cherry dances across the tongue along with caramel and spice. With a soft, lingering finish, this wine is sure to impress and delight.
