VINTAGE
The 2022 growing season was blessed by late winter rains that replenished our soil moisture as the vines emerged from dormancy. A cold spring led to a slower start for the vines, but we avoided any frost danger. Summer growing conditions were exceptional, with consistent weather and blue skies ushering in a Goldilocks summer that was not too hot and not too cold. We are thrilled with the quality of the grapes from the outstanding 2022 vintage.
WINEMAKING
Truly befitting of its name, Adattamento (adaptation) is a versatile wine capable of owning the floor with almost any dance partner. This wine spends 20 months in barrel after finishing fermentation out on the crushpad. The barrels for this wine are an even mix of new and neutral French oak, giving the finished wine structure while also allowing for flexibility.
TASTING NOTES
A layered and expressive blend, the 2022 Adattamento marries the structure of Cabernet Sauvignon with the energy of Italian varietals. The nose opens with black cherry, cassis, and anise, supported by dried herbs, leather, and a faint floral lift. On the palate, dense black fruit is met with savory complexity—notes of dried oregano, clove, and a touch of smoked meat. Firm yet polished tannins frame the wine, with vibrant acidity from Sangiovese and Aglianico providing lift and length. The finish is persistent, with a spicy undertone that speaks to both power and restraint. A wine that reflects adaptation—not only of varietals to place, but of style to purpose.
PAIRING NOTES
Pairs beautifully with Grilled Ribeye, Wild Mushroom Polenta, Rosemary Lamb Skewers, or with the richness of aged Gouda, Gruyère, or aged Manchego for an elevated cheese experience.
